Make a mojito simple syrup by pouring 1 cup white sugar and 1 cup water 2 quartered limes and all the mint leaves into saucepan, simmer for a 20 minutes and cool.
Fill each glass almost to the top with ice. Add 1/8 cup of the syrup from the step above and pour 1 1/2 ounces of rum over the ice. Fill the glass with carbonated water. Stir, taste, and adjust with more or less syrup mixture if desired. Garnish with a lime wedge.
