Asian Cold Noodle

Ingredients

  • 1/2 carrot cut julienne
  • 1/3 cucumber cut julienne
  • 3 oz pasta noodles
  • 1 Tbsp light soy sauce
  • 1/2 Tbsp dark soy sauce
  • 1 Tbsp dark vinegar
  • 1 Tbsp kimchi sauce
  • 1/2 C shredded cabbage (optional)
  • 2 oz Kimchi (optional)
  • 1/2 C bean sprouts (optional)
  • 1/2 C hard boiled egg (optional)
  • 1/2 C chopped tomato (optional)

Instructions

  1. Cut your veggies (separately) then saute the carrots.
  2. Cook the noodles in boiling water for 5-7 mins.
  3. Drain noodles and cool it with running cold water.
  4. Mix the liquid seasoning in a large bowl.
  5. Transfer noodle into the bowl
  6. Add veggies and mix it
  7. Add 1-2 cup cold water
  8. Add 2-3 ice cube
