Bacon Spinach Quiche

Ingredients

  • 6 eggs
  • 1 1/2 C heavy cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 C baby spinach
  • 1 lb bacon
  • 1 1/2 C swiss cheese
  • 1 pie crust

Instructions

  1. Preheat the oven to 375F.
  2. Cut uncooked bacon into cubes and cook til crispy Set aside on paper towels to drain.
  3. Combine the eggs, cream, salt, and pepper in a food processor or whisk by hand. Place pie crust in a pie plate to keep it's shape. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top.
  4. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedge sices.
