Chicken Chow Mein

Ingredients

  • 2 tsp cornstarch
  • 1 1/2 Tbsp soy sauce
  • 1 1/2 Tbsp oyster sauce
  • 1 1/2 Tbsp Chinese cooking wine
  • 2 tsp sugar
  • 1/2 tsp sesame oil
  • 1/2 tsp White pepper
  • 6 oz chicken thigh fillets cut into bite size pieces
  • 1 1/2 Tbsp peanut oil
  • 6 oz chow mein noodles
  • 3 1/2 C green cabbage finely shredded
  • 1 carrot julienned
  • 1 C bean sprouts
  • 3 shallots chopped
  • 2 cloves garlic finely chopped
  • 1/4 C water

Instructions

  1. Mix together cornstarch and soy sauce, then next 5 ingredients down to white pepper.
  2. Marinate Chicken: Pour 1 tbsp of Sauce over the chicken, mix to coat, set aside to marinate for 10 minutes.
  3. Cook Noodles: Prepare the noodles according to the packet instructions (my pack says soak in boiled water for 1 minute), then drain.
  4. Saute garlic: Heat oil in wok or large fry pan over high heat. Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't let it burn!
  5. Fry chicken: Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute.
  6. Fry veggies except sprouts: Add the cabbage, carrot, and shallots. Stir fry for 1 1/2 minutes until the cabbage is mostly wilted.
  7. Fry noodles in sauce and water: Add the noodles, Sauce and water. Stir fry for 1 minute, tossing constantly.
  8. Fry sprouts: Add bean sprouts and toss through for 30 seconds or until the bean sprouts just start to wilt.
  9. Remove from heat and serve immediately.
