Cauliflower Bolognese

Ingredients

  • 28 oz can diced tomatoes
  • 1/2 C chicken stock
  • 1 red onion chopped
  • 1 C red lentils
  • 1 head cauliflower
  • 1 clove garlic minced
  • 2 tsp oregano
  • 1 tsp basil
  • 1 tsp coriander
  • 1 tsp salt and pepper
  • 1/2 tsp red pepper flakes
  • 1/2 lb noodles

Instructions

  1. Combine everything except noodles into a gallon size freezer bag and freeze til needed.
  2. When ready to cook, dump bag into slow cooker and cook on low for 3.5 hours.
  3. Smash cauliflower to break up florets.
  4. Serve over regular or zucchini noodles. Top with grated parmesan.
