Mushroom Barley Stew

Ingredients

  • 1 C pearl barley
  • 1 diced onion
  • 1 stalk celery diced
  • 2 diced carrots
  • 1 lb baby bella mushrooms
  • 14 1/2 oz can diced tomatoes
  • 1 tsp salt and pepper to taste
  • 1 tsp basil
  • 2 garlic cloves minced
  • 6 C chicken stock

Instructions

  1. Combine everything into a gallon size freezer bag and freeze til needed.
  2. When ready to cook, dump bag into slow cooker and cook on low for 8 hours.
  3. Serve over rice.
