Coconut Quinoa Curry

Ingredients

  • 1/2 white onion chopped
  • 1 sweet potato chopped
  • 1 broccoli crown chopped
  • 1/4 C quinoa
  • 15 oz can chickpeas
  • 28 oz can diced tomatoes
  • 29 oz canned coconut milk
  • 2 minced garlic cloves
  • 1 Tbsp shredded ginger
  • 1 Tbsp tumeric
  • 2 tsp soy sauce
  • 1 tsp miso
  • 1/2 tsp chili flakes

Instructions

  1. Combine all ingredients into a gallon size freezer bag and store til needed.
  2. When needed, dump bag into slow cooker with 1 cup water.
  3. Cook on high for 3-4 hours.
