Chicken Burritos

Ingredients

  • 6 burrito flour tortillas
  • 16 oz shredded cheese blend
  • 2 C cooked rice
  • 14 oz can black beans
  • 1 large chicken breast chopped
  • 1/4 C Salsa
  • 1 Tbsp lime juice
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 C chopped cilantro (optional)

Instructions

  1. Arrange the tortillas on a work surface.
  2. Combine all ingredients in a large bowl, mixing well to make the rice a bit gluey to hold together the ingredients. Taste to adjust seasoning.
  3. Place about 1/2 cup of filling in the bottom third of each tortilla, then fold in the sides and roll up from the bottom to seal.
  4. If serving the burritos right away, heat a large skillet over medium heat. Arrange the burritos seam-side down and cook until bottom is golden. Flip and cook until golden. Alternatively, wrap the burritos in aluminum foil and heat in a 350°F oven until warmed through, about 10 minutes.
  5. To freeze the burritos, wrap tightly in foil or wax paper and place in a resealable plastic bag. Freeze.
  6. Reheat frozen burritos in the oven or microwave until hot.
