Sweet Chili Thai Sauce

Ingredients

  • 1 C water
  • 1 C rice vinegar
  • 1/4 C sugar
  • 1 inch ginger root minced
  • 1 clove garlic minced
  • 2 tsp hot chile pepper minced
  • 2 tsp ketchup

Instructions

  1. Pour water and vinegar into a saucepan, and bring to a boil over high heat. Stir in sugar, ginger, garlic, chile pepper, and ketchup; simmer for 5 minutes.
  2. In small bowl, mix a little bit of water with your cornstarch til there aren't any lumps. Then stir mixture into the saucepan.
  3. Remove saucepan from stove to cool. Then transfer to a bowl or dressing bottle and refrigerate until needed.
