Tofu Nuggets

Ingredients

  • 1 package firm tofu
  • 1/4 C flour
  • 2 egg yolks
  • 1 C breadcrumbs or cracker crumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 dash or a few grinds of pepper

Instructions

  1. Preheat oven to 350 degrees F
  2. Cut tofu into your favorite configuration (my toddlers like fingers)
  3. Spread flour on a small plate or flat dish
  4. Beat egg yolks in a shallow dish
  5. Mix remaining ingredients in shallow dish
  6. Coat each piece of tofu in the flour to cover, then into the egg, then crumbs, and then to the rack. Tip: Chilling will help to set the coating, but you can just bake it right away if you prefer.
  7. Bake at 350 degrees F for 15-20 minutes until crisp
