Tofu Pasta

Ingredients

  • 1/2 onion diced
  • 1 Tbsp oil
  • 1/2 green bell pepper seeded and diced
  • 3/4 C firm tofu
  • 3/4 C tomato puree
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/2 box dried pasta shapes

Instructions

  1. In a saucepan, saute the onion in the oil. Once softened, add the green pepper and cook for a further 3 minutes.
  2. Crumble the tofu into the saucepan and cook for 5 mins, stirring occasionally. Drain any excess liquid, then add the tomato puree and basil. Cook the pasta, then top with the sauce and parsley.
  3. Chop finely – this recipe is suitable for babies capable of chewing soft lumps.
