Spinach Potato Pancakes

Ingredients

  • 1 potato
  • 1 onion
  • 1 C spinach
  • 3 Tbsp almond flour
  • 2 eggs
  • 2 Tbsp minced garlic
  • 1 pinch salt and pepper to taste
  • 1 Tbsp olive oil

Instructions

  1. Peel and boil the potato until soft. Remove potato from heat and allow to cool. Chop onion, spinach and potato.
  2. In a small bowl, mix all ingredients until well combined.
  3. Heat frying pan on medium heat, adding enough oil to coat pan
  4. Measure out 1/4 cup of mixture for each pancake (mixture should make 6 small pancakes)
  5. Flatten into a small patty and fry.
  6. Flip patties when slightly brown on one side (3-4 minutes)
  7. Eat warm or cold as lunch, dinner or a on the go snack!
