Cucumber Salad

Ingredients

  • 2 cucumbers thinly sliced
  • 1/2 shallot thinly sliced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 C white vinegar
  • 1/4 C water
  • 1/4 C white sugar
  • 1 1/2 tsp dried dill

Instructions

  1. Toss together the cucumbers and shallot in a large bowl with salt and pepper to taste.
  2. Combine the vinegar, water and sugar in separate bowl and microwave for 2 minutes. Whisk til the sugar is completely dissolved, then pour over the cucumber and onions.
  3. Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.
