Crock Pot Jambalaya

Ingredients

  • 1 lb skinless boneless chicken breast cubed
  • 1 lb andouille sausage sliced
  • 28 oz can diced tomatoes with juice
  • 1 large onion chopped
  • 1 large green bell pepper chopped
  • 1 C chopped celery
  • 1 C chicken broth
  • 2 tsp dried oregano
  • 2 tsp dried parsley
  • 2 tsp Cajun seasoning
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried thyme
  • 2 tsp worchestershire sauce
  • 1 tsp file powder
  • 1 tsp salt
  • 1 lb frozen cooked shrimp without tails
  • 1 1/4 C uncooked white rice

Instructions

  1. In a slow cooker, mix all ingredients except the rice and shrimp.
  2. Cover, and cook 7 to 8 hours on Low, or 3 to 4 hours on High. Stir in rice 3 hours from end if cooking on low, 2 hours if cooking on high. Stir in the shrimp during the last 30 minutes of cook time.
