Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large tupperware container. Gradually stir in enough beer so that the mixture can be drizzled from a spoon.
Put a handful of fries in the tupperware and shake to distribute the coating. Remove them with tongs and give a little shake to dislodge excess. Drop the tong-full into the oil; it's ok if they clump together. After 1 minute, use the tongs to shake up the clump to an even dispersion in the oil. Fry until golden brown and crispy. Remove and drain on paper towels.
Repeat previous step with the remainder of the fries.
