Yellow Rice

Ingredients

  • 2 tsp vegetable oil
  • 2 Tbsp chopped shallot
  • 1 garlic clove chopped
  • 1 1/2 C jasmine rice or basmati rice
  • 2 1/4 C chicken broth
  • 1 tsp salt
  • 1/2 tsp turmeric

Instructions

  1. Heat oil in heavy medium saucepan over medium-high heat. Add shallot and garlic; saute until just beginning to brown, about 2 minutes.
  2. Add rice, broth, salt, and turmeric. Bring rice to boil. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid is absorbed, about 18 minutes.
