Mashed Potatoes

Ingredients

  • 1 1/2 lb yukon gold potatoes
  • 3 Tbsp melted butter
  • 1/2 pt whipping cream
  • 1 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1 tsp fresh rosemary
  • 1 garlic clove minced
  • 4 oz cream cheese (optional)

Instructions

  1. All ingredients should be room temperature before adding them in. Fill a large pot 1/2 full with cold water and add a tsp of salt. Skin potatoes and cut potatoes to about 1 inch in size. Add potatoes into the cold water. Bring to a boil and maintain boil til potatoes are soft and fork can be inserted easily, about 20 minutes.
  2. Use a hand masher, potato ricer, or you can press the potatoes through a sieve with a spatula to get an exceptionally creamy potato. Slowly mix in melted butter and set aside.
  3. Heat the cream with rosemary and garlic in a small saucepan over medium heat. Just BEFORE it simmers, pour the cream through a strainer into the mashed potatoes (so the spices don't go into the potatoes). Add in cream cheese if desired. Blend together.
