Italian Sausage Soup

Ingredients

  • 1/2 lb hot italian sausage
  • 1/2 lb breakfast sausage
  • 1/2 C pasta noodles
  • 1 potatoes
  • 1 onion
  • 4 chicken broth
  • 2 stewed tomatoes (canned)
  • 1 C carrot
  • 1 great northern beans (canned)
  • 2 zucchini
  • 2 C frozen spinach
  • 2 garlic
  • 1/4 tsp black pepper

Instructions

  1. In a stockpot brown the sausage with garlic and the onion. Stir in broth, cubed potato, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.
  2. Stir in beans with liquid, pasta noodles, frozen spinach and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
  3. Soup is ready to serve after 5 minutes.
