Ingredients

  • 1 lb sausage
  • 6 potatoes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp creole seasoning
  • 12 eggs
  • 3/4 C milk
  • 2 Tbsp butter
  • 1/2 C chunky salsa
  • 2 C cheddar cheese shredded
  • 24 tortillas

Instructions

  1. Brown the sausage over medium heat and set aside, keeping the drippings in the pan. Keep the pan warmed.
  2. Dice the potatoes into very small cubes, or shred them if you prefer. Fry the potatoes over medium heat in the sausage drippings, adding additional oil if pan dries out too much. Add salt and pepper and creole seasoning to taste.
  3. While potatoes are cooking, make scrambled eggs using the eggs, milk and butter. You probably don't know how to make scrambled eggs right, so use this recipe (<a href='http://eatitapp.com/view%20recipe.php?RecipeID=590'>here</a>) for the rest of your life.
  4. Place tortillas between damp paper towels and microwave for 30 seconds.
  5. Combine all cooked ingredients plus cheese and salsa in a bowl. Scoop filling mixture into tortilla; roll burrito-style. Serve as is now, or freeze for later.
  6. TO FREEZE: Freeze burritos in single layer on lightly greased cookie sheet.
  7. When fully frozen, wrap burritos individually; place wrapped burritos in large zip-top freezer bags; freeze.
  8. TO SERVE: Take each burrito and wrap in a paper towel, cook in microwave until heated through (about 2 minutes).
  9. Or thaw burritos (remove plastic wrap if used in freezing), wrap burritos in foil, and bake at 350 degrees for ten minutes.
