Cook your refried beans either on the stovetop or in the microwave. Set aside and allow to cool.
Preheat your oil in a large skillet. Fry up your tortillas, 30 seconds per side. Plate the tortillas, and use the remaining oil to cook your eggs over easy.
Spread refried beans on each of the tortillas. Plate the eggs on top of the beans. Top with a spoonful of salsa, chopped up bacon, slices of avocado and/or a sprinkle of cotija cheese.
