Ingredients

  • 1 C all purpose flour
  • 1 C yellow cornmeal
  • 1/4 C white sugar
  • 1/4 C brown sugar
  • 1 tsp salt
  • 3 1/2 baking powder
  • 1 egg
  • 1 C milk
  • 1/3 C vegetable oil
  • 1/2 tsp vanilla (optional)

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan, or use a muffin pan if you want them to cook faster.
  2. In a large bowl, combine all the dry ingredients, then stir in the rest until well combined. Pour batter into prepared pan.
  3. If using a cake pan, bake for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean. If using a muffin tin bake for 15 minutes.
