Sweet Potato Casserole

Ingredients

  • 4 sweet potatoes
  • 2 Tbsp white sugar
  • 2 eggs beaten
  • 4 Tbsp butter softened
  • 1/2 C evaporated milk
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp clove
  • 1/4 tsp nutmeg
  • 1/4 C packed brown sugar
  • 1/8 C all purpose flour
  • 2 Tbsp butter softened
  • 1/2 C chopped pecans

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Peel the sweet potatoes, then wrap them in foil and bake them in the oven for an hour, or until soft.
  3. In a large bowl, mash the potatoes and mix them with white sugar, eggs, butter, milk, vanilla, salt and spices. Mix until smooth.
  4. Transfer to a 9x13 inch baking dish.
  5. In medium bowl, mix the brown sugar and flour. Add in the butter and pecans. Sprinkle the topping over the sweet potato mixture.
  6. Bake in the preheated oven 30 minutes, or until the topping is lightly toasted.
