Frozen Mojitos

Ingredients

  • 1 C sugar
  • 1 C water
  • 1/2 C fresh lime juice
  • 1/2 C fresh mint leaves
  • 2 limes zested
  • 1/2 C light rum
  • 8 crushed ice
  • 4 Mint sprigs (optional)
  • 4 lime wedges (optional)

Instructions

  1. In a saucepan over medium heat, add the sugar, water and mint leaves. Cook for about 5 minutes, stirring often, until the sugar is dissolved and the syrup is clear. Set aside to cool.
  2. Put the sugar syrup, lime juice, mint leaves, lime zest, and rum into a blender and blend until smooth. Add the ice and blend until slushy. Spoon into glasses.
  3. Garnish with a sprig of mint and a lime wedge if desired.
