Mixed Greens and Cranberry Salad

Ingredients

  • 1 head of broccoli
  • 1 bag of mixed spring greens
  • 1/2 C dried cranberries
  • 6 sweet peppers

Instructions

  1. Slice the sweet peppers into 1 inch strips, discarding seeds and veins.
  2. Cut the tips off the broccoli head and chop to bite sized pieces.
  3. Rinse the vegetables and salad greens together and allow to drain.
  4. Combine in a large bowl with cranberries on the side so they don't get lost at the bottom of the salad bowl. Use a vinaigrette dressing.
