Pancakes

Ingredients

  • 1 cooking spray
  • 2 Tbsp butter (unsalted)
  • 1/2 tsp baking soda
  • 3/4 C milk
  • 2 Tbsp white vinegar
  • 1 C all purpose flour
  • 1 tsp baking powder
  • 2 Tbsp sugar
  • 1 eggs
  • 1/2 tsp salt
  • 1 Tbsp butter (unsalted)
  • 1 Tbsp butter (unsalted)
  • 1 Tbsp vegetable oil
  • 1 Tbsp butter (unsalted)

Instructions

  1. In a bowl, mix together all the dry ingredients. Make a well in the center and pour in the milk. Add the egg, vanilla and oil, whisking until mixed but still a bit lumpy.
  2. Heat a frying pan (if it is not non-stick, you will need to melt a bit of butter on it) to medium, or 350 for an electric skillet. When hot, pour in some pancake mix. If you are adding fruit, I like to sprinkle it on top of the pancake now. When the pancake starts to bubble in the center and the bubbles stay open, flip and continue cooking until both sides are golden brown.
  3. Repeat with the rest of the batter. Keep the cooked pancakes covered with a tea towel to keep them warm while you finish cooking the rest.
