Vegan Sweet n Spicy Chili

Ingredients

  • 2 Tbsp safflower oil
  • 1 yellow onion
  • 2 cloves garlic
  • 1 can crushed green chilies
  • 2 C vegan beef crumbles
  • 1 Tbsp soy sauce
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • 1 Tbsp cumin
  • 1 Tbsp chili powder
  • 1/2 Tbsp pumpkin pie spice
  • 1 pinch black pepper

Instructions

  1. Heat the oil in a large pot
  2. Chop the onion and garlic. Mix onion, garlic, and crushed green chilies into pot and sauté for 2 minutes
  3. Add vegan beef crumbles and soy sauce and heat until cooked through
  4. Add tomato sauce, diced tomatoes, cumin, chili powder and pumpkin pie spice
  5. Stir until well-combined.
  6. Reduce the heat to low and let simmer for about 10 minutes, stirring
  7. Salt and pepper to taste
  8. Garnish with grated cheese, sour cream, and green onions
