Pasta with Tomatoes and Asparagus

Ingredients

  • 8 oz penne pasta
  • 15 oz Italian style diced tomatoes (canned)
  • 1/2 lb asparagus
  • 10 oz spinach
  • 8 oz sun dried tomatoes
  • 1/4 C feta cheese

Instructions

  1. Bring a pot of salted water to boil. Add the pasta and follow package instructions to cook the pasta until al dente.
  2. Meanwhile, combine tomatoes and asparagus in a large non-stick skillet. Bring to a boil over medium high heat. Reduce heat, and simmer 10 minutes.
  3. Add spinach to the sauce; cook for 2 minutes or until spinach wilts, stirring constantly.
  4. Serve sauce over pasta, and sprinkle with feta.
