Potato Salad

Ingredients

  • 8 medium potatoes
  • 1 1/2 C mayonnaise
  • 2 Tbsp cider vinegar
  • 2 Tbsp sugar
  • 1 Tbsp yellow mustard
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 celery ribs sliced
  • 1 C onion minced
  • 5 hard boiled eggs
  • 1 tsp paprika

Instructions

  1. Peel and dice potatoes to about 1 to 2 inch squares. Boil potatoes in salted water until done - usually about 15 minutes. Place potatoes in large bowl and set aside to cool to room temperature.
  2. While the potatoes are cooking hard boil the eggs - you can use the following method:
  3. Place eggs in a saucepan and cover them with an inch or two of cold water. Bring the pan to a full rolling boil, then turn off the heat, cover the pan, and let it sit on the burner for 10-12 minutes.
  4. Fish out the eggs and put them in a bowl of ice water. Let them cool for a minute before peeling off the shells. Set aside to cool to room temperature.
  5. Mix mayonnaise, cider vinegar, sugar, mustard, salt, garlic powder, and pepper in another bowl, then add celery and onions and mix well. Stir in eggs and potatoes once they're cool, then sprinkle a little paprika on top.
