Ingredients

  • 8 C whole tomatoes (canned)
  • 2 1/2 C onion
  • 1 1/2 C green bell pepper
  • 1 C jalapeno
  • 6 garlic
  • 2 tsp cumin
  • 2 tsp black pepper
  • 1/8 C canning salt
  • 1/3 C sugar
  • 1/3 C vinegar
  • 15 oz tomato sauce (canned)
  • 12 oz tomato paste (canned)

Instructions

  1. Mix all ingredients together and bring to a gentle boil for 10 minutes.
  2. Pour into three six quart jars and stir gently to remove bubbles. Seal in jars and cook in hot water bath for 10 minute.
  3. You can make this a chunky or smooth salsa by the size of your chopped vegetables. You can make it a very smooth salsa by pureeing the vegetables.
