Ingredients

  • 3/4 C cream
  • 2 Tbsp shortening
  • 4 Tbsp butter (unsalted)
  • 1/3 C sugar
  • 3/4 tsp salt
  • 4 tsp baking powder
  • 2 C flour
  • 1 eggs
  • 1/2 C dried currants

Instructions

  1. Heat oven to 375 degrees F.
  2. In a large mixing bowl, combine flour, baking powder, salt and sugar. Cut in cold butter and shortening. In a separate bowl, combine cream with beaten egg then add to dry ingredients and stir in fruit.
  3. Turn dough out onto a floured surface. Roll dough with a rolling pin and use a cookie cutter or drinking glass to cut into biscuit size rounds.
  4. Bake on a lightly greased cookie sheet for 15 minutes or until brown. Place on cooling rack to cool slightly before serving.
