Ingredients

  • 2 C whipping cream
  • 1 meringue nests
  • 2 tsp pomegranate juice
  • 2 tsp sugar
  • 4 C strawberries

Instructions

  2. Hull and chop the strawberries and put into a bowl. Add the sugar and pomegranate juice over the strawberries and let marinate while you whip the cream.
  3. Whip the cream in a large bowl until thick but still soft, about 2 minutes with an electric beater. Roughly crumble in 4 of the meringues nests - you will need chunks for texture as well as a little fine dust. Scoop about a half cup of the marinated strawberries and set aside, then scrape the rest of the strawberries into the meringue cream and stir. Distribute the berry cream into 4 dessert cups and top each with some of the strawberries you set aside.
