While a medium pan is heating up over medium heat, chop chicken into 1 inch cubes. When the pan is hot, add oil and give it a second to heat up, then add the chicken. If the pan dries out add a pat of butter or oil to keep it moist. Cook the chicken until juices run clear and no longer any pink, then set aside.
On a clean cutting board, chop celery, bell pepper and onion into small bits.
In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add cooked chicken, and mix well. Season with black pepper to taste. Chill 1 hour before serving.
