Cut the pomegranates in half and hold over a large bowl. Smack the rind to dislodge the seeds into the bowl, then push with your thumbs to invert the pomegranate. Gently dislodge any remaining seeds from the pulp, trying to not pop open the juice packets around the seeds. Repeat for all pomegranate halves.
Add water to the seed bowl and skim off any pulp bits that float to the top. The seeds should be nicely separated at the bottom. Strain the seeds out of the water and pour into a blender.
Blend on high till nice and pureed, then pour into a strainer lined with a coffee filter (or paper towel). Gently squeeze the filter without tearing it to release the rest of the juice while containing the seed pulp. Now your pomegranate juice is ready to drink or use in any recipe. This should keep in your fridge for about 2 months.
