Bacon Pico de Gallo

Ingredients

  • 8 bacon
  • 1/2 C onion
  • 4 radish
  • 1/2 C cilantro
  • 2 jalapeno
  • 2 garlic
  • 1 lime

Instructions

  1. Cook the bacon until extra crispy. Let the bacon drain on paper towels, then crumble and add to a medium sized bowl.
  2. Chop the onion, radishes, cilantro and add to the bowl. Halve the jalapenos and scoop out the seeds with a spoon, then mince them and add to the bowl. Add the garlic and lime juice and toss to mix.
