Rice with Cashews, Raisins and Turmeric

Ingredients

  • 1 Tbsp vegetable oil
  • 1 1/2 C basmati rice
  • 14 oz can coconut milk
  • 14 oz can chicken stock
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 pinch crushed red pepper flakes
  • 1 tsp salt
  • 1/4 tsp ground turmeric
  • 1 bay leaf
  • 1/2 C raisins
  • 3/4 C cashew halves

Instructions

  1. Heat oil in a large pot over medium-high heat and mix in the spices to the oil. Stir in the rice and cook for 2 minutes. Pour in the coconut milk, chicken stock, raisins, and cashew halves. Bring to a boil, then cover, and reduce heat to low. Cook about 20 minutes or until rice is tender.
